I take care of my kids, my husband, my work, and then I do my best to take care of me, but at the end of the day I am done. I am spent. I have nothing left to give.
Can you relate to that statement above? I was speaking with a young mother recently and that is what she said to me. She’s exhausted and has been for years. At the time she shared that with me, her exhaustion had manifested into an autoimmune disease of her thyroid called Hashimoto Thyroiditis. I know exactly how she feels…or at least I used to. I was that person. Giving all I had to everyone else and not taking care of myself. Took a few years to turn it all around, but I figured it out, and you can too.
Hi. My name is Nicole Erickson. I’m a certified Nutritional Therapy Consultant (NTC) and AIP Coach. I’m passionate about helping women tackle their gut dysfunction and skin conditions through healing their gut and strengthening their immune system. We do this using targeted food therapies like the autoimmune protocol (AIP), specific carbohydrate diet (SCD), low-fodmap, low-histamine, etc. The food therapy used will depend on symptoms and diagnosis (if the client has one). In other words, it’s a bio-individual approach. Along with food therapy, we also focus on the critical lifestyle pieces that can bring relief like stress management, sleep, self-care, and movement.
I became a certified NTC and AIP coach because I have struggled deeply with my own health. In 2006, I was diagnosed with the autoimmune disease, ulcerative colitis, but it was only 4 years ago that I successfully managed my symptoms and found symptomatic remission using food and lifestyle as medicine.
Even in remission, I still suffered from frustrating digestive issues, weight gain, and fatigue. Those issues only got worse when I become a parent and worked full time outside the home. Took a few years for me to reach a much healthier place, but ultimately, with real food nutrition, healthy lifestyle habits, and discovering my food sensitivities through the autoimmune protocol (AIP), I was lucky enough to make huge improvements. I am proud of that accomplishment, and it’s turned into a passion for helping others with the same distress.

Part of my work as a nutritional therapy consultant and AIP coach is to help coach the participants of Angie Alt’s successful online group autoimmune program called SAD (standard American diet) to AIP (autoimmune protocol) in Six. Angie’s AIP program is not only helping to transform the lives of those living with autoimmunity, but her program is also helping to change how autoimmune disease is diagnosed and treated. I am thrilled to be a part of it. The people I have met so far are true health warriors!
